Recipe: Salad a la Gwen
An invention of mine that I made for lunch this afternoon. I'd intended on just putting some lettuce and leftover chicken in a bowl, and tossing it up with some premade store bought dressing, but at the last moment, I decided to fancy it up a bit.
These measurements are all extremely vague, because I never measure when I'm being creative in my cooking. I just put what I think looks right. Sorry!
what you will need;
- About a cup of cold cooked chicken
- Two heads of lettuce
- Three small tomatoes or two large ones
- Olives
- A cucumber
- An avocado
- Oregano
- Dijon mustard
- Mayonnaise
- Salt
- Honey
- Garlic
- Balsamic vinegar
- Olive oil
Salad: Break up the two heads of lettuce and put them in a large bowl. (You need lots of room for tossing.) Add the cucumber, tomatoes and avocado (chopped), along with the chicken and a few spoonfuls of olives.
Dressing: In a small bowl, put about three big tablespoonfuls of mayo, one teaspoon of mustard, one teaspoon of honey, one teaspoon of oregano, two tablespoons of vinegar, four tablespoons of oil, a pinch or two of salt, and two cloves of crushed garlic. Whisk it all up with a fork until it's creamy.
Pour the contents of the bowl onto the salad, toss it up, and eat it!
If this dish does not suit your taste in any way, it can be modified. More or less of anything is perfectly fine, along with adding any of your favorite ingredients. I was going to put some feta cheese, but the boys don't like it.
